Sushidokoro Miyako Wakemise

Sushidokoro Miyako Wakemise is a renowned sushi bar nestled quietly in a back alley near Akabane Station. It enjoys a reputation as a favorite spot for celebrities owing to the delicious sushi it offers. The sushi bar has partnered with Dairiki Shoten for nearly 50 years.
After training at the Japanese restaurant Teraoka in Hakata, Mr. Yoshiyuki Noguchi, the shop's proprietor, refined his skills for about eight years as an external student at the renowned Japanese restaurant Oryori Imamura in Ginza. His experience at Imamura, where the novelist Shotaro Ikenami is said to have been a frequent customer, greatly influenced his approach to cooking and shaped his current cooking style. Mr. Noguchi explained, “At the Ginza restaurant, chefs, who considered stock essential, never tried to draw customers’ attention by doing something different, nor did they pursue something splendid or gorgeous in cooking. They served authentic Japanese dishes, and even though their flavor was straightforward, customers would feel as if the taste permeated their entire being. One characteristic of the dishes served at Miyako Wakemise, which has inherited these teachings, is their simplicity; however, their deep taste and flavor spread throughout the mouth, soothing the minds and bodies of customers who savor the dishes.

Enjoying sushi and other Japanese dishes at the same time

Sushi is typically served as the main course at Edo (Tokyo) style sushi bars. However, Mr. Noguchi, the third proprietor, introduced a unique cooking style that allowed customers to enjoy sushi alongside other Japanese dishes in Tokyo earlier than anyone else. At first, this was criticized as an improper cooking style, but Mr. Noguchi intentionally adhered to his method. Additionally, he actively introduced food ingredients such as ara (saw-edged perch), kue (kelp grouper), and kawahagi (thread-sail filefish), which are common in Kyushu but rarely found in Tokyo.

At Miyako Wakemise, a full-course dinner features a specific order in which dishes are served: customers first enjoy Japanese dishes along with sake, and then savor sushi at the end of the meal. All dishes are served to match the pace of customers, and each one is prepared with utmost care. They are cooked to perfection, allowing the quality of the ingredients to shine through. Even other chefs are impressed by the flavor in Miyako Wakemise’s dishes, captivating food enthusiasts and enabling them to savor food and sake to the fullest.
