Nakajo

Nakajo, located on a quiet back alley near Kannai Station in Yokohama, is a top-notch sushi bar that serves carefully selected sushi toppings of the highest quality in their best condition. Careful attention is given to every aspect of its exquisite sushi, including visual appeal, aroma, sensory experience, and temperature. Nakajo’s sushi should be enjoyed using all five senses. The sincerity and skill of the proprietor, Mr. Kiyotaka Nakajo, are evident in every piece of sushi crafted by his hands. Well-trained at the restaurant Sushi Kappo Kiyokawa, run by his father, Mr. Nakajo pursued a career as a sushi chef in earnest. Motivated by his strong desire to elevate his father’s sushi bar into a first-class establishment, he developed his own cooking style by sourcing ingredients from the Tsukiji wholesale fish market. In 2017, he relocated his sushi bar from Yokohama’s Chinatown in Motomachi to Kannai, where he started anew by renaming it Nakajo.

Enjoying a fantastic time with the chef's choice courses

Nakajo offers only the chef’s choice courses, which include an hors d’oeuvre, a grilled dish, and pieces of sushi. The flexibility with which the chef crafts a set of courses that fully satisfy customers based on their preferences, along with the speed and excellent timing with which they are served, adds to the allure of the sushi bar.

Extracting the authentic flavor of ingredients

All purchased fish and shellfish are brought to their ideal condition through proper maturation, temperature control, and skilled handling of a fish knife. Two types of vinegar—rice vinegar and akasu made from long-matured sake lees—are used for white rice, and the amount used is expertly adjusted according to the types of sushi toppings. With one bite of a beautifully crafted piece of sushi, its rich flavor and fragrance spread, leaving a lasting impression on the mind. This is precisely the specialty that can only be provided by Mr. Nakajo.

Focusing on purchasing as a trustworthy judge

Mr. Nakajo visits the Toyosu wholesale fish market every morning and personally selects the best fish and shellfish of the day with his own eyes. He has built deep trust with wholesalers, and with his impeccable judgment, he commands respect even among professional buyers. The fresh fish used by Sushidokoro Nakajo is primarily delivered by Dairiki Shoten. In the future, prioritizing quality, Dairiki Shoten will continue to source the freshest fish to meet the expectations of the sushi bar.
