Splendid alfonsino is a deep-sea fish that lives at depths greater than 200 meters. It is characterized by large, sparkling golden eyes and a vivid red body, and its white meat is incredibly delicious. It is also an excellent choice for sashimi and sushi toppings and is regarded as one of the prized fish.
In particular, splendid alfonsino from Choshi in Chiba Prefecture is known for its high fat content throughout the year because it inhabits one of Japan’s premier fishing grounds where the cold Oyashio current meets the warm Kuroshio current. This abundance of fat distinguishes it from those found in other sea areas.
Splendid alfonsinos landed at the Choshi fishing port are caught one by one using a pole-and-line fishing method called “tatenawa.” Their bodies are not harmed because they are caught by hand. Fishing operations begin before dawn, and by carefully monitoring the handling of splendid alfonsinos both on board and in the market, fishers ensure that they are auctioned on the morning of the day they are caught. For this reason, they are shipped while extremely fresh.
