Golden sea bream is a fish that lives in the deep sea at a depth of over 200 meters. It is characterized by its large, shining golden eyes and vivid red body, and its white meat is extremely delicious. It is excellent as sashimi or sushi and is considered a luxury fish.
In particular, golden sea bream from Choshi, Chiba Prefecture, is known for its fatty sea bream, as it is raised in one of the richest waters in Japan where the cold Oyashio current and warm Kuroshio current collide, and it has an outstanding fat content compared to sea bream from other regions.
The sea bream landed at Choshi Fishing Port in Chiba Prefecture is carefully caught one by one using a single line fishing method called tachinawa. Because the fish are caught by hand, there are no scratches on the body. Operations begin at dawn, and the fish are carefully handled on board and at the market, so that they are ready for bidding at the market in the morning of the same day. As a result, the fish are shipped at extremely high freshness.
