Concentrated sweetness and flavor
There are three types of sweet sea bream: white sweet sea bream, red sweet sea bream, and yellow sweet sea bream. Among these, the white sweet sea bream is exceptional and its catch is small. The most commonly seen type is the red sea bream, but the white sea bream is called shirakawa or even shirakawa (white skin).
White sea bream grows up by digging deep holes in the sandy mud seabed and feeding on shrimp, crabs, and cockles near the seabed. Since they do not migrate or surface, they store high quality fat and have firm flesh.
Its meat is characterized by its concentrated sweetness and flavor.
It has recently become popular because of its extremely delicate and fine-grained flesh, as well as its elasticity and fat content.
