The yellowtail caught from mid-September to late October are called “Tenjo yellowtail,” heralding the arrival of the cold-water yellowtail season.

The name “Tenjo” originates from its refined sweetness and clear umami flavor that melt elegantly in the mouth, without relying on richness.

In early autumn, the fish grow larger and more flavorful, making them a special seasonal delicacy as the first catch of the season.
Compared to winter yellowtail from other regions, they lack heavy fat, boast a light, firm texture, and leave a clean aftertaste.
