Izumi City, Kagoshima Prefecture, is a thriving fishing town facing the Yatsushiro Sea, an inland sea nestled between mainland Kyushu and the Amakusa Islands.
The horse mackerel from Izumi Fisheries are carefully caught one by one using handline fishing with artificial bait by veteran fisherman Toshimi Makihira. They are placed into tanks without being touched by a single finger, ensuring the flesh remains unblemished.
The flesh, firm from being tossed by the currents, features fine, smooth muscle fibers and just the right amount of fat. With each bite, sweetness and umami spread throughout.
